Lasagna

Lasagna is a much loved meal in our family. Fortunately Kingston also enjoys it which has allowed me to add calogen into the recipe and get those much needed extra calories in. In this recipe, I use quite a lot of calogen in the cheese sauce, so this Lasagna isn’t really great for the rest of us (we may end up the size of a house afterwards) so I usually cut this up into Kingston portion sizes (usually half a cup to a cup) and freeze in bulk. This lasts a good while and its’s quick and easy to defrost over night or heat up in the microwave. I also use this opportunity to hide in some veggies that my little one won’t willingly eat on his own. This Lasagna recipe with the added calogen adds around 1080 extra calories! This recipe is only recommended for those needing the extra calories for dietary related malnutrition, conditions requiring a high energy intake, with or without fluid and electrolyte restrictions and protein restricted diets.





Ingredients:

  • Lasagna sheets ( whatever preference, we use Orgran Gluten free)
  • Tomatoe pasta sauce (Whatever preference, we use ORTO D’AUTOREHEAT & SERVE – PUTTANESCA)
  • Cheese sauce mix (whatever preference, we use ANGEL FOOD CHEESEY SAUCE -TASTY)
  • 700g Beef mince
  • 1 can of Diced tomatoes
  • 1 Onion, finely chopped
  • 2 Carrots, finally chopped
  • 1 zuchinni, finely chopped
  • 1 cup of Calogen
  • 2 cups of Soy milk

Method:

  • Cook the mince on a low heat. While the meat is cooking, finely chop all the veggies and chuck them in the fry pan with the mince.
  • In a sauce pan, add 1/2 cup of cheese mix, 2 cups of milk of choice (we use soy) and 1 cup of calogen. Add the liquids slowly as you stir and heat until you have reached desired thickness.
  • Once the meat and veggies are cooked, add the puttanesca sauce. Add a bottom layer of the meat mixture to a large size oven dish and then add a layer of lasagna sheets.
  • Add a layer of the cheese sauce mixture and repeat the layers until the dish is full.
  • Place in the fridge for a couple of hours to let the pasta sauce soak through to the pasta sheets and cook for 1 hour. Serve hot with some veggies.

Notes:
* Continue to add more cheese sauce mixture for a more intense flavour or thicker sauce. Add more milk if you want to dilute the flavour or make a thinner sauce.
* Add some cheese on top about 15 minutes before the lasagna has finished cooking. This will also help to get in some extra calories!
*If you use a different cheese sauce recipe, follow the packet directions and substitute the milk for calogen.
* You can cook straight after you have made the lasagna, however I usually feel the pasta doesn’t cook through fully unless i leave the sauces to soak into them in the fridge for 1-2 hours

Satay Chicken and Rice

Notice that the colour of Kingston’s isn’t much different to Peter’s? This is great when you have a fussy eater, they won’t be able to tell the difference!

I was able to make two meals for Kingston out of this recipe (one for dinner and one to freeze) and both were about 1/2 cup full. The rest served myself, my husband and my son Peter for one meal.

Satay Chicken and rice is another favourite with the kids and another meal we are lucky Kingston has taken to. I do make my own version of satay chicken but it’s more time consuming so this is a great, quick recipe and the packet sauce is delicious! Bonus is that it’s both dairy free and gluten free!

Ingredients:

  • 2 Chicken breasts1 Packet of Passage to Asia Satay Chicken (from coles)
  • 1/2 Carton Alpro soy cream
  • 50mls Calogen
  • 2 Cups of Rice
  • 50mls Calogen
  • 2 Cups of Rice

Method:

  • Cut up the chicken breast and cook in the fry pan on a medium heat until cooked all the way through.
  • In a sauce pan, add 2 cups of rice with 2 cups of water and cook until rice is soft all the way through.In one bowl, add 1/4 Satay chicken sauce and 50mls of Calogen. Stir until well combined.In another bowl, add the rest of the Satay sauce and 1/2 carton of Alpro soy cream. Stir until well combined.In the bowl with calogen and satay sauce, add 1/4 the cooked chicken breast and some rice. Divide this up into two containers. Serve one and freeze the other.Add the second bowl of satay sauce with the soy cream to the fry pan with the cooked chicken. Add the rest of the rice and combine. Heat if needed and serve up the rest of the family!

Notes:

* This serving suggetion with the separated sauces is for one small child and the rest of the family to enjoy the same meal but with the calogen only in the small child’s meal. This can be altered to make the whole meal have calogen by adding 150mls calogen to the satay sauce.

*You can add more Calogen to the childs seperated sauce, however you will need to add more of the satay sauce so the flavour does not become too diluted.

*Add some vegetables to the mix or serve with some naan bread on the side.
